~ Grissini (Breadsticks)

Image2257

Adapted from:
LA times

Description:
Crispy dried breadsticks~

Ingredients:
3/4 C warm water
2 1/4 tsp active dry yeast
1 1/2 tsp sugar
1 1/2 C all-purpose flour
1 C whole wheat flour
2 tbsp olive oil
1/4 tsp sea salt

Directions:
1) In a large bowl, combine the water with the yeast, sugar and all-purpose flour. Set aside for 20 min, until bubbly.
2) Stir in the wheat flour, olive oil and salt and knead until smooth and elastic, about 5 min. Add more flour where necessary. Coat the dough with olive oil and place in a bowl, cover with plastic wrap and allow to rise in a warm place for 1 hour.
3) Remove the dough from the bowl and divide it into four pieces on a floured surface. Work on one dough while leaving the rest in the bowl with a damp cloth over it. For crispy sticks, roll them really thin and allow to cool down in the oven after baking. For crispy exterior and chewy interior, roll them to thickness of your finger.
4) Place the strips about 1/2" apart on an aluminium tray. Repeat with the remaining dough. Allow the grissini to rise until puffed, about 30 min.
5) Bake the grissini, in batches, on the top shelf of the oven preheated to 200 deg until lightly browned, about 10 min, rotating halfway through. Cool on a rack and continue until all the grissini are baked. Cool, then store in a sealed bag.

Remarks:
I must be dreaming when I was reading through the recipe! Interpreting "one-half cup" as 1 1 1/2 C, I wondered why Step 1 yielded a dough that's too dry. How can a dry dough become "bubbly"? In a bid to make up for my mistake, I increased the water to 1 C, activation time to 20 min, sugar to 1 1/2 tsp (how can one feed the yeast while depriving oneself of the sugar rush?) and whole wheat flour to 1 C. Fortunately, the dough turned out easy to mould!

Image2255

I had rolled divided my dough into two - one rolled in powdered sugar with sesame seeds (top), the other incorporated with mixed herbs and sprinkled with salt (bottom), so as to create two varying flavours to this versatile recipe.

Image2264

Mum commented that the bread was bland, and I agreed too. Perhaps I shouldn't have skimped on the salt and sugar! Also, the bread sticks lost their crispiness fairly quickly, within a few hours. Blame it on the bad humid weather we have here! Some fixes which I would propose, would be to bake the bread sticks at a lower temperature for a longer period, coat with caster sugar not icing sugar, as well as make those crispy thin types instead of the fatter versions. Toast lightly before consumption if possible!

More creative variations on grissini: squid ink, nori.

~ Crispy Cinnamon Sugar Biscuits (Eggless)

Image2235

Adapted from:
Little Corner of Mine

Description:
Crispy sugar biscuits topped with cinnamon sugar~

Ingredients:
1 1/2 C plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 C icing sugar
1/2 C or 115 g of butter, softened
2 tsp vanilla essence
1 tbsp milk

1 tbsp ground cinnamon
3 tbsp caster sugar

Directions:
1) Sift flour, baking powder, baking soda and icing sugar together.
2) Cream butter, vanilla and milk. Stir in flour mixture to get a pliable dough.
3) Divide dough evenly and put to rest in the fridge for 1/2 hour. Combine cinnamon and sugar.
4) Roll the first dough and cut into desired shapes with a cookie cutter. Coat top layer generously with cinnamon sugar mixture.
5) Bake in preheated oven at 175 deg for 8 to 10 min, or till edges are slightly browned. Cool on a rack before storing in an airtight container.

Remarks:
These are really crispy biscuits! However, I find them bland without the cinnamon sugar topping. I didn't know at first so I wasn't generous enough with the cinnamon sugar topping, so my first batch was really just some salty biscuit. The saltiness was no doubt due to my poor substitution of flour and leavening agents for the self-rising flour. Cut down on the baking powder please!

Image2233

It's very unfortunate my second batch of biscuits were burnt as I went to change my bedsheets during the baking time. The original recipe says to bake for 15 to 17 min, but mine started browning at 8 min or so, so do adjust your baking time and keep an eye on these little gems.

Image2242

I couldn't stop myself from consuming these yummies! Before I knew it, I only had 7 or 8 biscuits left. How am I going to distribute those for my friends the next day? =x I should have just packed all the biscuits into separate bags immediately after cooling like what I always do, instead of putting them into a container and grazing on them till only a few measly ones are left.

Pardon me for the awful pictures which do not do justice to the amazing recipe, for I wasn't in the mood to take aesthetic pictures with a splitting headache, tortured ear drums and an exhausted mind.

~ Spaghetti Aglio Olio

Description:
Simple spaghetti tossed in garlic and tomatoes~

Ingredients:
60 g wholewheat spaghetti
1 tbsp extra virgin olive oil
5 cloves of garlic, minced
4 chilli padis, deseeded and diced
1 tomato, quartered
Salt and pepper
Grated Parmesan cheese (optional)

Directions:
1) Cook spaghetti in salted water till al dente, reserve 1 C of pasta water.
2) Heat up 1 tsp oil and stir fry garlic, chilli and tomatoes for 5 min.
3) Toss in pasta and add varying amounts of pasta water to simmer for 5 min.
4) Season with salt and pepper. Toss with the remaining oil and serve with cheese.

Remarks:
Simplicity is key to an aglio olio. I could taste the nuttiness of wholewheat spaghetti, and yes the garlic too! Opt for the usual spaghetti if you do not like wholewheat types. Oh ya, I do miss the Parmesan cheese though since I didn't have any.

Anyway, kitties are cute (I know, I know, this is quite random)! This one's spotted at Bedok:

Image2223

Aww, so cute! Don't you just want to give her a nice rub on her big belly? She just plopped down onto the floor, and snoozed away after realising that a two-legged creature was pointing a black rectangular mouse at her while awkwardly carrying a black scratching post.

~ Avocado Oatmeal

Image2204

This will happen one day. This has to. With my obsession with oatmeal and avocado (+ a tiny winy bit of creativity =x), it is bound to be that one fine day, I'll marry them together! *wedding bells* ^ ^ This chemistry sparked off while I was on bed yesterday night, a time when I was supposed to be night-dreaming, and not day-dreaming about food stuff.

Image2192

What I did was to cook 1/3 C oats in 1/2 C milk, and then blend it with 1/2 avocado and 1 tbsp flaxseeds - all done within 10 min.. minus away the enjoyment, picture-taking and washing that is. The overall product was predominantly oatmeal, with a slight fruity tinge of avocado and sported a great hue of tea green. I had it plain without any sweetener since I liked the taste, but if I were to add one, I would have used a tsp or two of sweetened condensed milk.

Image2200

And, I have decided to add a tbsp of flaxseeds to all recipes that requires blending, for the flaxseeds really get mushed up well to release their omega-3s! Oh this reminds me of something. This may sound silly, but no matter how appetising and yummy your meal with whole flaxseeds look and taste, do try to resist the temptation of eating and blogging at the same time. I was very distressed over the fact that my "C" on the keyboard started being insensitive (you see, I'm a strong believer in Fujitsu laptops), and only realised the reason why after dislodging one puny flaxseed from the interior groove of the "C" key. Hey, how did THAT get in? =/
