~ Roasted Pumpkin Seeds

Image1781

Butter-coated and roasted for 45 minutes in the oven at 150 deg. Could do with boiling with brine and then drying out for one day before roasting.

~ Cereal Fruit Smoothie

Modified from:
EatingWell

Description:
Breakfast drink loaded with all the good stuff~

Ingredients (1 serving):
1 C (150g) berry yoghurt
1/4 C milk
2 tbsp cereal
1 orange
1 apple

Directions:
1) Blend all ingredients together. Sprinkle with some cereal before serving.

Remarks:
Stole the idea of incorporating some toasted carbohydrates into a fruit smoothie from EatingWell.com. It's not a bad idea - tasted something like sweet puke to me, but it's really just mushed-up cereal with milk and fruits.

~ Pumpkin Custard

PC022002

Taken from:
Tiffany's

Description:
Eggy and sweet custard~

Ingredients (3 servings):
650 g pumpkin, chopped into large chunks
2 tbsp sweetened condensed milk
1 egg
1/4c water (omit water)

Directions:
1) Boil pumpkin chunks till soft.
2) Blend pumpkin with condensed milk, egg and water.
3) Steam for 20 min, and serve warm or chilled.

Remarks:
I should have omitted the water as it made the custard a tad too liquidy, and the egg seemed to be too overpowering. Nevertheless, it's not a bad idea to get some Vitamin A into one's diet!

~ Perfect Hardboiled Egg

Image1758

A soak in boiling water for 15 min (no heating) is all the humble egg asks for in exchange for a luscious treat.

Image1762

Oh don't fret about the cholesterol. One egg a day wouldn't harm. I'm sure my university associate professor in the food chemistry department will agree with me on that.
