~ Stir Fried Chinese Cabbage with Mushroom

Description:
Simple greens that can be whipped up in minutes!

Ingredients:
1 tsp oil
3 dried mushrooms, soaked and sliced
4 heads of Chinese cabbage (long types), chopped
1 tbsp soy sauce

Directions
1. Sauteed oil and mushrooms together till fragrant.
2. Add the cabbage and soy sauce. Stir well, cover and simmer for 5 min.
3. Serve hot.

Remarks:
Make sure not to overcook the cabbages to avoid it being mushy. I didn't, and it turned out green and crunchy. The mushroom added the flavour, in doing so, brought out the sweetness in the cabbage. The only problem with it was.. it needed more people to finish it! I underestimated the amount of cabbage to cook, and came up with a big bowl for one! This recipe makes 3-4 servings.

~ Fruit Salad with Sesame-Orange Dressing

Salad tossed in low-fat sesame-orange dressing.

Ingredients:
1/2 C orange juice
1/2 tsp grated orange peel
1 tsp sesame oil
1 tsp soy sauce

1/2 C cucumber, chopped
1/8 C sliced carrots
1 C lettuce, chopped
1 orange, chopped
4 strawberries, sliced
1 handful blanched beansprouts
1 handful sesame seeds

Directions
1. Mix wet ingredients together, toss with the remaining fruits and veggies.

Remarks:
I do not particularly like the taste of the sesame-orange dressing, I would still prefer creamy dressings. Also, the veggies seemed to pale in comparison to the fruits, which were very sweet, causing the veggies to taste raw and bland.

~ Yoghurt with Cereal Mix

Description:
Unusual but nutritious and yummy concoction of yoghurt with cereal mix!

Ingredients:
1/4 C muesli mix (?)
3/4 C cornflakes (Post Cereals: Pecan)
1/4 C dried cranberries
1 C fruit yoghurt

Directions
1. Mix dry ingredients together and top yoghurt in a bowl.

Remarks:
Breakfast for today! I'm a biased person, any yoghurt combinations serve my tastebuds well!

~ Chicken and Broccoli Alfredo

Spaghetti slathered in velvety, rich alfredo sauce with chicken and broccoli.

Ingredients (serves 3-4):
300 g spaghetti
1 C broccoli and cauliflower
1 medium onion, diced
4 garlic parts
1/2 button mushroom, sliced
200 g boneless chicken, cut into small pieces
1 can (10 3/4 ounces) Campbell's cream of chicken soup
1 C milk
1/2 tsp pepper
Cheese (optional)

Directions
1. Cook spaghetti in salted water till al dente. Add the cauliflower during the last 7 min of cooking and broccoli during the last 3 min. Drain the linguine mixture well in a colander.
2. Heat the oil in a skillet over medium-high heat. Stir-fry garlic, onion and mushroom.
3. Add the chicken and cook until it's well browned, stirring often.
4. Stir the soup, milk and black pepper in the skillet. Cook until the mixture is hot and bubbling, stirring occasionally.
5. Pour over spaghetti and serve warm with cooked veggies and cheese.

Remarks:
Taste-wise, it was quite plain for me (perhaps due to the absence of basil or some herbs, could only taste the creaminess), but on the whole it was not bad. I found that the Campbell's soup was too salty, and I didn't really see the low-sodium version in the supermarkets. I had to increase the amount of milk that the original recipe called for as it was too thick, and used more pepper to moderate the saltiness. Oh ya, this recipe isn't true-blue alfredo sauce ;)

~ Sunshine Toast & Atomic Tuna Salad

Description:
Fried egg in the centre of buttery toast, accompanied with a healthy side tuna salad.

Ingredients (toast):
1 tbsp butter
1 slice bread
1 egg
Pepper to taste

Ingredients (salad):
185 g canned chilli tuna (retain sauce)
1/2 head broccoli
1/2 head cauliflower
2 medium onions, diced

Directions (toast):
1. Create a hole in the middle of the bread, using a cookie cutter or simply a mug. Butter both sides of the bread.
2. Fry lightly on one side of the bread, and turn over. Crack the egg into the hole and cook for 3 min with the lid on till egg is set. Season with pepper and serve warm.

Directions (salad):
1. Blanch veggies - cauliflower for 5-8 min while broccoli for 2-3 min. Dice.
2. In a large bowl, toss together the chilli tuna, broccoli, cauliflower and onions. Serve as side.


Remarks:
These are for a Saturday's brunch, with other additions like mixed nuts, boiled carrots, toasted cheesy tomato and banana. I find the dishes alright, but my family did not really appreciate them. Guess I wouldn't be making these again to avoid unnecessary nagging and insults.
