~ Spaghetti Aglio Olio

Description:
Simple spaghetti tossed in garlic and tomatoes~

Ingredients:
60 g wholewheat spaghetti
1 tbsp extra virgin olive oil
5 cloves of garlic, minced
4 chilli padis, deseeded and diced
1 tomato, quartered
Salt and pepper
Grated Parmesan cheese (optional)

Directions:
1) Cook spaghetti in salted water till al dente, reserve 1 C of pasta water.
2) Heat up 1 tsp oil and stir fry garlic, chilli and tomatoes for 5 min.
3) Toss in pasta and add varying amounts of pasta water to simmer for 5 min.
4) Season with salt and pepper. Toss with the remaining oil and serve with cheese.

Remarks:
Simplicity is key to an aglio olio. I could taste the nuttiness of wholewheat spaghetti, and yes the garlic too! Opt for the usual spaghetti if you do not like wholewheat types. Oh ya, I do miss the Parmesan cheese though since I didn't have any.

Aww, so cute! Don't you just want to give her a nice rub on her big belly? She just plopped down onto the floor, and snoozed away after realising that a two-legged creature was pointing a black rectangular mouse at her while awkwardly carrying a black scratching post.
